Ista Hyderabad brings
‘Padharo Marhe Des’ –
a royal Rajasthani food fest
at its specialty Indian restaurant,
‘Deori’. The festival is
starting from July 10 and will go on till Jul 26, 2009 from 7:00 pm
onwards. The Menu will offer to guests a wide selection of exotic cuisines
from the Marwar region of Rajasthan which consists of mainly vegetarian
Food based on mostly dairy
products. The festival is monitored by
Ista’s Executive Chef, Mr. Amit Wadhawan,
a specialist in
Indian cuisine and he has two visiting ‘Maharaj’
Sawai Singh and
Prakash Kumabath, specially
flown from Marwar region to give an authentic touch to the food.
‘Padharo Marhe Des’
is a unique collection of recipes from the
royal region of Rajasthan that features very prominently on the food map
of India . Marwari
food is known to be primarily
vegetarian and is prepared in ghee and other milk products. Ista
Hyderabad has also brought in some exciting non-vegetarian dishes from the
Gharanas of the Rajputs
of the region to cater to the liking of the meat lovers. Each of the
dishes at the festival has been prepared keeping in mind the sentiments of
the Marwari patrons (separate cooking sections for Veg and Non Veg food)
with emphasis on authenticity of the tastes.
‘Padharo Marhe Des’
will
bring in the true feel of Rajasthan by adding in the essential
entertainment element for
the guests like traditional Rajasthani folk music, dance and a customary
puppet show amid a colorful set up, adding to the flavor of the night.
Some of the popular Marwari
dishes which are being served at Ista Hyderabad during this
food festival are:

The very
famous Rajasthani combination of dal, bati and churma (dal is lentils;
bati is baked wheat ball; and churma is powdered sweetened cereal).

The ever
popular sweet dish called Lapsi prepared with broken wheat sautéed in
ghee and sweetened.

Mawa
Kachori from
Jodhpur , Alwar
ka Mawa, Malpuas from Pushkar, Rasogullas from
Bikaner , Ghevar
from Jaipur are some of the other popular sweet dishes served at the
Marwari food festival.

A unique
dish of the Maharaja of Salwar – The Junge Maas – This is a favorite
among the Maha raj as of the medieval period of Rajasthan for the meat
lovers.
The guest will have a
choice of both
Ala Carte and a Traditional Thali service of the exotic food
specialties from the
Rajasthan region available at the restaurant. The packages start at
Rs. 590/- nett.
