Ista revives the long
lost cuisine of the Nizams

Hyderabad|India|February'2010: In a unique initiative to reinstate
the 400 year old culinary delights of Hyderabadi food, Ista Hyderabad is
showcasing ‘The Lost Cuisine of the Nizams’ to relive the princely legacy
of Nizams at its specialty Indian restaurant, ‘Deori’. An expansive spread
of authentic Hyderabadi and Indian cuisine will be designed and served
under the expert guidance of Mr. Amit Wadhawan, Executive Chef of Ista.
Renowned Hyderabadi Chef Rawoof has also been roped in by Ista exclusively
for this special festival.
The 12 day royal food festival will be on from 10th February to 21st
February 2010 from 7:00 pm onwards.
‘The Lost Cuisine of Nizams’ is a distinctive re-collection of cuisine
from the noble legacy and passed on from generations. The food fest
presents the exclusive culinary style of the Hyderabadi-Nizami era. The
Royal food fest will feature the traditional and most exotic dishes with
special emphasis on the lost recipes of the olden days.
The Nizami Food fest has a grand a la carte menu featuring a majestic
spread of recipes from the Deccani region like Biryanis, Kebabs Boti
Jhammi, Kalmi, Shikampur, Sheek, Lagan-ke-kababs, Dum-ke-kababs; Pathar ke
Gosht; Khormas and Lukhmi, Haleem. Also Kichri (a rice and lentil
selection); Chugur Gosht; Kheema methi; Nahari; Rumali Rotis and Chukka
Gosht relive the homely aromas of the erstwhile food. Bagara Baingan;
Mirch-ka-salan, Tomato kut; and Shahi dahi vadas stand up to treat the
delight of the Vegetarians.
Enticing the sweet senses are Double-ka-meetha; Qubani-ka-meetha;;
Badam-ki-jhab and Dil-e-Firdaus for a whole-some royal experience.
Commenting on the fest, Jaideep, GM, Ista Hyderabad, said, “We always
strive to live in accordance to the traditional culture of Hyderabad with
our food fests. Understanding the affinity one feels towards ‘food of my
native’, we at, Ista, felt that a food festival aimed at reviving the long
lost cuisine of the Nizams’ would help not just to reach out to people

on the same. Therefore, reviving the glorious past of the Nizams’ with
their culinary delicacies for our guests has been a fulfilling experience

Deori is the Indian specialty restaurant of Ista Hyderabad and has the
perfect ambience reflecting the essence of the Royal Nizami era. Live
Ghazals and instrumental music will be an integral part of this festival
which will help elevate all the dining guests into the immemorial era of
the Hyderabadi Nizams.
